In the early 1920, my grandfather Hasan left his small village of N’ilin to go work at a falafel restaurant in the port city of Yafa. He learned the trade quickly and made some of the best falafel and hummus in town. My grandfather moved on to be a chef for the some of the Jordanian diplomatic missions around the world. He travelled around the world, cooking Middle Eastern specialties and learning about other food culture from different countries. My grandfather told me that the secret to good food is good ingredients. Always use fresh and high quality vegetables and meats was his advice which I followed all my life.
